Game Day Spinach & Kale Cheese Balls

Looking for new, fresh, healthier appetizers to serve at a Super Bowl party, we've adapted this recipe from a recipe we found online from 2 Sisters Recipes.

15 mins 30 - 35 mins 60 mins or less

INGREDIENTS:

1 Teaspoon French Made Easy
2 Tablespoons Olive oil
2 Tablespoons Unsalted butter
1 Egg
1 Green onion, diced
1 Small yellow onion, diced small
2 Cups Fresh kale, washed and chopped
1 Large bag fresh spinach (6 ounces)
¾ Cup Parmesan cheese, grated
1 Cup Bread crumbs (we used gluten free breadcrumbs)

Here is everything you need to make this tasty bite size snack. You should be able to get about 20-25 balls from this recipe. Depending on how big or small you make them.

First, dice the onion. Cut it in half lengthwise, and then trim both ends off. Take the halves, and then thinly slice rows (pictured above). Turn 90 degrees, and then dice.

Add the butter, olive oil and 1 teaspoon of French Made Easy into a pan on medium-high heat.

Add the onion and sauté for 6-7 minutes or until translucent.

Add the kale, and then cook for another 3-4 minutes. You want the kale to get wilted and release the water it holds.

Add the spinach. Cook for another 5 minutes or so.

Don't cook too long. You want the mixture to still have a little bite to it and not be really mushy or overcooked.

Add mixture to a food processor and gently pulse the machine until the mixture is a good consistency for rolling into balls.

Mix in the breadcrumbs. Let it cool off a bit before you add the egg. I covered mine and let it chill in the fridge for about 15 minutes. Have an extra 1/2 cup of breadcrumbs to roll the balls in.

Add the egg, green onion and freshly-grated parmesan cheese. Gently mix with a spoon then let it rest for another 5 minutes before rolling into balls.

Take about 1 tablespoon of the mixture, and then roll it into a ball using the palms of your hands. Next, roll the ball in the extra breadcrumbs and place on a lightly-oiled piece of foil on cooking pan.

Sprinkle a little extra parmesan cheese then bake at 375 degrees for 15-20 minutes. They can be enjoyed warm or cold, but I prefer them hot. Enjoy!
