Pimento Cheese with Smokin' Chipotle
A smoky twist on classic pimento cheese — perfect as a spread, dip, or the secret to the best grilled cheese ever.
Ingredients
- 2 tsp Smokin' Chipotle
- 4 oz sharp yellow cheddar, grated
- 4 oz sharp white cheddar, finely grated
- ½ cup mayonnaise
- 1 tsp finely grated onion
- 2 oz pimentos, finely diced
Directions
- Grate the two cheddars using different grater sizes for varied texture if possible.
- Combine all ingredients in a large bowl and mix until evenly blended.
- If too dry, add up to ¼ cup more mayonnaise.
- Serve with crackers, on toast, or use for grilled cheese.
