Roasted Mediterranean Chicken with Olives

Here is a chicken recipe that is easy to make in your kitchen, yet tastes like a restaurant quality dish!

INGREDIENTS:

2 tsp Mediterranean Magic
2 lbs chicken quarters with skin
1/4 cup olive oil
2 tsp red wine vinegar
1 red onion, sliced 1/4 inch thick
1/3 cup Kalamata olive, pitted and halved
1/3 cup Spanish stuffed olives, halved
2 Tbsp Capers 

DIRECTIONS:

Preheat oven to 425 degrees.

Next thing you want to do is wash the chicken then dry it off with paper towels. Mix the olive oil, vinegar and 1 tsp of Mediterranean Magic in a large bowl. Place chicken in bowl and toss to make sure the chicken has been evenly coated. Let it sit covered, at room temperature, for about 10-15 minutes to release all the flavor of the blend.


Place chicken in 13x 9 baking dish and bake for 20 minutes till it browns. While the chicken is cooking, toss the onions with the remaining 1 tsp of the Mediterranean blend. After the chicken has browned, turn the heat down to 250 degrees. Scatter the seasoned onions, capers and olives around the chicken. Cover tightly with foil and cook for another 45 minutes or until the breast reaches an internal temperature of 165 degrees.

Serve immediately with rice, pasta, or quinoa and a salad.
