Roasted Rainbow Carrots
Simple roasted rainbow carrots with Mediterranean herbs and olive oil — tender, caramelized, and full of flavor.
Ingredients
- 2 tsp Mediterranean Magic
- 1 lb organic rainbow carrots, peeled
- ⅓ cup olive oil
Directions
- Preheat oven to 350 degrees.
- Cut each carrot in half lengthwise, then cut each half in half again.
- Toss carrots with olive oil and Mediterranean Magic on a baking sheet.
- Roast for 30-35 minutes, or until tender.
- Transfer to a serving dish and drizzle with any remaining oil from the pan.
Tips
- Great as a side for braised short ribs, or chop them cold into a salad the next day.
