Roasted Rainbow Carrots

Simple roasted rainbow carrots with Mediterranean herbs and olive oil — tender, caramelized, and full of flavor.

Ingredients

  • 2 tsp Mediterranean Magic
  • 1 lb organic rainbow carrots, peeled
  • ⅓ cup olive oil

Directions

  1. Preheat oven to 350 degrees.
  2. Cut each carrot in half lengthwise, then cut each half in half again.
  3. Toss carrots with olive oil and Mediterranean Magic on a baking sheet.
  4. Roast for 30-35 minutes, or until tender.
  5. Transfer to a serving dish and drizzle with any remaining oil from the pan.

Tips

  • Great as a side for braised short ribs, or chop them cold into a salad the next day.
