Go Greek Grilled Rack of Lamb

onSpring is here - well, in some parts of this great country. Spring to me means it's time to start grilling. I truly think my favorite way to cook food is on the BBQ. Meats, veggies, breads and even fruit, all taste great with a little flavor from the grill. This lamb dish reminds me of how much I love cooking over the open flame.
If you can light a match, you can cook this dish. Go to your local butcher or meat shop and get an all-natural and organic "Frenched" rack of lamb. Actually, maybe by 2 of them - depending on how many people you feeding. Get your gill started. You can always use a gas grill but I find that cooking with charcoal simply tastes better. Never by charcoal that has been soaked in lighter fluid. That's just more chemicals we simply don't need. Go buy a Chimney starter. You can get one at any hardware store and/or your local grocery store. They are great, easy to use and will have you grillin in no time!

INGREDIENTS:
2-3 tsp Go Greek
1 - Frenched Rack of Lamb (organic of course)
5-6 Tbsp Olive Oil
1 Lemon, zest and juice
DIRECTIONS:
Mix oil, Go Greek, lemon zest and it's juice. Pour over the entire lamb chop and massage into the meat a bit. Cover and let sit at room temperature for at least 30 minutes. You can do this the night before and let it marinate if you want.
Once
your grill is nice and hot grab your tongs and place that lamb, bone
side down for. Lamb cooks really quickly but if you like it more well
done, just let it chill on the grill a bit longer. Most of the time,
you can cook the lamb in less than 20 minutes. I like to have a little
bit of a char so I will flip it at about 7 minutes and leave it on the
grill for 7-10 minutes more.
Once the meat has reached your
desired cooking temperature, remove from the grill and let it sit and
rest for 15 minutes or so. You can cover it, but not air tight.
Resting the meat is as important as seasoning it. Don't cut it right
away or all the juices will run out!
After letting it rest,
slice each lamb chop off the rack and sever immediately. Grill some
veggies and make a great salad - your friends and family will love you
for this one!
