Game Day Pasta Salad

This recipe is light, fresh and full of flavor - perfect for any occasion, especially football Sunday. Go Greek with a little lemon and fresh dill makes this dish hit harder than a linebacker!

PREP TIME COOK TIME TOTAL TIME
15 mins 10 - 15 mins 30 mins or less

INGREDIENTS:

3½ Teaspoons Go Greek**
1 Box farfalle pasta, cooked al dente (use De Cecco)
2 Cups grape or cherry tomatoes, halved
4 Tablespoons Fresh dill, chopped
½ Cup Italian parsley, chopped
1 Red onion, diced small
1 Green bell pepper, diced small
1½ Cup feta cheese, cubed or crumbled
⅓ Cup freshly squeezed lemon juice
1 Garlic clove, mashed
½ Cup olive oil
Fresh ground pepper to taste

DIRECTIONS:

Everything you need is inn this picture.

Finely dice the onion into small pieces (pictures above) and then place in a large bowl.

Cut the tomatoes in half then put them in the bowl. If you want to add a bit more color to this dish, use yellow and red tomatoes. Just make sure they are fresh and crisp.

Dice the green bell pepper into small pieces. Place in bowl with onion and tomatoes.

Remove the dill leaves from the stem. Place in a pile to chop. If you roll all the dill into a tight bunch, it makes it really easy to chop. Add to the bowl.

Just like the dill leaves, do the same with the parsley. The stems can be bitter so take the extra 30 seconds to remove them.

I prefer buying a block of feta with some of its liquid still in it. It just seems to taste better than the kind you can buy crumbled. Dice the feta (picture above), then add to the bowl.

Sorry, but no photos at this time for the vinaigrette. In a separate bowl, juice the lemon, mash the garlic with 1/2 teaspoon Go Greek. Whisk the garlic, lemon juice, olive oil and the last 1/2 teaspoon of the Greek blend.

Add 2.5 teaspoon of Go Greek to the bowl of vegetables. Add the pasta, then mix all ingredients together while adding the lemon vinaigrette. Be gentle when mixing it so you don’t mash all the ingredients. Chill then serve. Enjoy!
