Roasted Rainbow Carrots
It is almost Easter so we thought it would be the perfect time to roast some beautiful and colorful carrots. We used Mediterranean Magic for this recipe, but any of our seasoning blends would work!

Mediterranean Magic Seasoning Blend
1 Pound bag of organic rainbow carrots
⅓ Cup Olive oil
This is a super easy recipe to make. Peel the entire bag of carrots. If you are in a time crunch, just wash them and skip the peeling part. Either way works. Preheat your oven to 350 degrees.
Cut each carrot in half, lengthwise. Then cut each of the halves in half. Add the olive oil and 2 teaspoons of Mediterranean Magic. Mix well.
Place in your oven and roast 30-35 minutes, or until the carrots are tender to touch. Place them in a dish and make sure to pour all the oil left over on the pan on top of the carrots. Enjoy...
Recipe Tip: We used these carrots as a side dish to another recipe we made for Braised Short Ribs. These are also great to make and eat the next day when they are cold, or chop them up to use in a salad.
