Black Bean Salad

onThis is a great recipe any time of the year. It's especially great for summer time BBQs and picnics. It can be made with any of our seasoning blends. It's a fast, fresh and healthy side dish for many occasions!

INGREDIENTS:
1 1/2 tsp Mexican in a Minute or Any of Our Blends
3 Tbsp olive oil
1 Tbsp red wine vinegar
16 ounce can black beans
1/4 cup green onions, diced
1/4 cup celery, diced
1/4 cup green bell pepper, diced
1/2 cup cucumber, peeled and diced
1 jalapeno, seeded and diced
1 large tomato, diced small
5 stuffed, green olives, diced
Smoked Olive Oil for finishing* (optional)
DIRECTIONS:
Okay, this one is easy. Rinse beans under cold water and drain. Put all ingredients in a bowl, mix well and chill for hour or more - but you can eat right away if you're starving and just can't wait. If you have it, drizzle on a little smoked olive oil before you serve. It rounds out the flavors nicely with a smoky taste.
*We used a smoked olive oil from Sapore Oil and Vinegars located in Capitol Hill, DC.
