Gluten Free Meatballs with Italiano Pronto

onThese are great little meatballs. We used Udi's Gluten-free bread in this recipe so all of you out there that need to eat GF, you can enjoy meatballs once again. Now for all of you out there that can eat gluten, you can always use your favorite bread.

INGREDIENTS:
3 tsp. Italiano Pronto
1 lb. ground beef
1 lb. ground pork
1 large onion, diced
3 tbsp. Italian parsley, diced
1 cup whole milk
4 pieces Udi's gluten-free bread
1 egg
1/2 cup Parmesan cheese, grated
3 cups tomato sauce
DIRECTIONS:
Make sure to pull the meat out of the fridge and bring it up to room temperature.
First thing you want to do is dice the onions pretty small - about 1/8" dice. Next you want to dice up the parsley too. Take the bread and soak it in the milk for about 15 minutes - this helps keep the meatballs nice and moist when cooking.
Preheat your oven to 350 degree.
Grab a medium saute pan and place it on the stove over medium-high heat. Make sure it's nice and hot before adding the olive oil and 1 teaspoon of Italiano Pronto. Add the onions and parsley. Saute them down until the onions are translucent - about 5-7 minutes. Don't burn them.
While the onions are sauteing, grab a large bowl and put all other ingredients in it. Take the bread out of the milk and squeeze it to remove any excess milk - add the bread to the bowl.
By now the onions should be done. Let them cool off a bit before adding them to the mixture so they don't cook the egg - I let them rest for about 10 minutes in a separate bowl. Once they have cooled, add them to the rest of the ingredients and gently mix.
You want to make sure the beef and pork are mixed well - but not over mixed. Let the mixture sit for another 10 minutes before rolling into balls.
I used 1/4 of a cup for each meatball. Scoop out 1/4 cup of the mixture, then using your hands roll them into a ball. If you use the measuring cup it helps keep the meatballs uniform in size! Place each meatball on a plate until you have used all the mixture.
Grab a large saute pan, add a couple tablespoons of olive oil. Make sure the pan is nice and hot before you add the meatballs. You want to brown them quickly to give a good crust around the meatball. Turn the meatball every couple of minutes trying to brown all of it's surface. It takes about 5 minutes to brown the entire meatball. Don't put too many at time in your pan, it will overcrowd them and take longer to brown.
Place the browned meatballs in a baking dish then top them with 3 cups of tomato sauce. Place in over and bake for 10 minutes at 350 degrees.
You can eat this alone, in a sandwich, or of course, with some spaghetti or pasta of choice!
