Italian Roasted Pork Sandwich with Broccoli

Philadelphia might be famous for its cheese steaks, but our personal favorite sandwich from Philly is a roasted pork sandwich with broccoli rabe (we used broccolini because we live on the West Coast and broccoli rabe is hard to find here) and a great aged, sharp provolone cheese. This is our version of this great sandwich. As everyone in Philly knows, the bread is just as important as the meat - do your best to find an Amoroso roll as fresh as you can but a good french roll will do!

We made our version with a pork loin. Make sure you don't confuse pork loin with pork tenderloin. Pork loin is not as tender but when slowly cooked, it's perfect for sandwiches. If you can find it, make this recipe with a pork butt, but only if you can find one! The original sandwich calls for broccoli rabe, but unless you live on the East coast you might have to use broccolini instead. Whatever you use, just make sure it's organic and fresh! It's about time we all stopped putting veggies in our bodies that came from a modified seeds. Go all-natural, GMO free and local! Your body will thank you later in life!

INGREDIENTS:

2-3 tbsp, +1 tsp Italiano Pronto
1/2 tsp crushed red pepper
1, 2.5-3 lbs pork loin or shoulder
3/4 lbs broccoli rabe (broccolini)
Aged provolone, thinly sliced
Olive oil
Lemon juice
4-6 fresh rolls


DIRECTIONS:

Let pork sit at room temperature for 30-60 minutes before cooking. Rub 2-3 tablespoons of Italiano Pronto all over the meat. Rub it in too so it penetrates the meat for maximum flavor.

Preheat your oven to 375 degrees. Place the roast in a roasting pan, cover with foil and cook for 30 minutes. Reduce the heat to 275 degrees and cook for an additional 1 hour. Make sure to have a meat thermometer available. Insert into the center of the roast and make sure the temperature is 145-150 degree (160 for well done). Remove from oven and let sit for 15 minutes before slicing.

While the roast is cooking, slice the broccoli then add to a saute pan with enough oil to coat it. Get it hot, really hot! I like to sear the broccoli. Add 1 teaspoon of Italiano Pronto as well as 1/2 tsp crushed red pepper and the juice of 1/2 lemon. Saute of medium-high heat for about 5 minutes. Remove from heat.

Grab your fresh roll, cut in half and lightly toast. Add pork, broccoli rabe and provolone! Enjoy one great sandwich!
