Italian Style Potato Salad

onSo we were sitting around today craving something with potatoes. Baked, fried or boiled was the next question. We decided to keep it light and healthy. "How about an Italian-style, red-potato salad?" someone threw out as a suggestion. Well, liking to do things differently here at World Seasonings, this is what we came up with. This is another one of those great recipes that could be made any number of ways with any of our blends. Have fun in the kitchen - if you don't have these exact ingredients, who cares? Just make sure you have some potatoes, olive oil, other veggies and any one of our blends. But if you do have all of the ingredients - get ready for one delicious potato salad!

INGREDIENTS:
2-3 tsp Italiano Pronto
1 1/2 lb small red potatoes
2 cups cherry tomatoes, cut in half
1 cup Kalamata olives, seeded and roughly chopped
1 Tbsp fresh thyme
1/2 cup flat-leaf parsley, chopped
3 scallions, diced
1/4 cup fennel, thinly sliced and chopped
1-2 Tbsp capers, drained
3+ Tbsp olive oil
Zest of 1 lemon
1/2 cup freshly-grated Parmesan cheese
DIRECTIONS:
Here is everything that you need.
First thing you want to do is wash the potatoes well and cut them in half. Put the potatoes in a pot and fill the pot with cold water up to an inch over the potatoes. Add 1 1/2 teaspoons of the Italiano Pronto blend. Bring to a boil and cook until the potatoes are tender when inserting a fork. Usually about 15 minutes or so.
While the potatoes are cooking, rinse and cut in half the cherry tomatoes and put in a large bowl.Coarsely chop the olives and add to the bowl. Dice your scallions about 1/2 way into the green stems then chop the parsley and thyme.
Take your fennel bulb and cut the top stem off just above the bulb. Cut the bulb in half then thinly slice it like in the picture above. After you sliced each half of the bulb, finely dice it. Add to bowl.
Mix everything in a large bowl with the olive oil, lemon zest, capers and last 1 1/2 teaspoons of Italiano Pronto. Use a bowl large enough to hold all the ingredients so you don't have to wash any more dishes than necessary.
After the potatoes are tender when inserting a fork, strain and add them to the bowl with the other ingredients and mix well.
Taste for seasoning. Add a pinch or two more of Italiano Pronto seasoning if needed and some fresh ground black pepper if you'd like. Finally add the cheese! Let chill for an hour before serving. You will love every bite.
