Roasted Zucchini and Tomato GF Sandwich

onLooking for a tasty gluten free veggie sandwich? My wife prefers to eat gluten free as much as possible so I created a flavorful GF sandwich using fresh tomatoes and roasted zucchini. (See recipe on the how to roast zucchini)

INGREDIENTS:
2 Pieces Udi's gluten free bread
2 Slices of fresh tomatoes
2 Slices fresh mozzarella
1 Large basil leaf (or a couple smaller ones)
1 Pinch of French Made Easy
DIRECTIONS:
Udi's gluten free bread is the best we have tried. It toasts up perfectly. I drizzled a little oil from the roasted zucchini on the bread, and then toasted it in my toaster oven before melting the mozzarella.
Sprinkle a pinch of French Made Easy on the cheese. Place the cheese in toaster oven to melt. I love to layer flavor so the French adds another element to this sandwich. It truly makes anything better!
While the bread is toasting, stack the following ingredients from bottom to top: sliced tomatoes, basil leaf and then the zucchini. This way, the melted mozzarella holds them in place while you eat.
Cut in half and enjoy. Perhaps make two, because 1 is never enough of this fantastic sandwich.
You can always make this sandwich with regular bread if you prefer. But I can't express enough how good Udi's GF bread is when toasted. It makes the best sandwiches when they need a crispy bite.
