Smoked Mushrooms

onSome of us love mushrooms, some of us don't. You are probably a lover or you wouldn't be reading this recipe. You can make these tasty treats one of two ways: roasted in the oven or smoked on your grill. Have you ever tried a smoked mushroom? That's okay - neither had we until we 'accidentally' made them one day while smoking a chicken on the grill.
If you have a grill and some smoking chips, it's well worth the wait and effort. **

INGREDIENTS:
1 1/2 tsp any of our seasoning blends*
1 box baby bella or cremini mushrooms
2-3 Tbsp. Olive oil
10-15 skewers
DIRECTIONS:
First
thing you need to do is get your smoker going. If you only have a
grill just put coals on one side of grill. You are going to put the
mushrooms above the side with no coals. You want to smoke them as
opposed to cooking them over direct heat.
While your smoker is
getting ready you can start prepping the mushrooms. Take the skewers
and soak them in water. Make sure you wash the mushrooms really well -
don't just rinse them off. Make sure they are clean. Dirt likes to
hide all over mushrooms.
Next thing you want to do is skewer the mushrooms, 4-5 per stick. Make sure there is 1/2" of space between each one. Pull our a pastry brush, pour olive oil over the mushroom and brush the oil to cover them entirely. Sprinkle the seasoning blend over the mushrooms. Make sure you have enough to coat all the mushrooms with oil and spice. (An even easier way to do it is to put the mushrooms in a bowl, drizzle with oil, add seasoning of choice, then mix well. I just didn't have a picture of me doing it that way.)
Now just throw them on your smoker or your grill for about 1 hour. Let them cook low and slow. Depending on the size of your mushrooms they may take a little longer, but either way, you are about to have one juicy, smoky treat! You can eat as they come out of the smoker or cool and use in many different ways. You can dice and use as a taco filling, chill and use on salads, slice for use in pasta dishes or simply slice and eat on toast!

If you don't have a grill or a smoker, put oil and seasoned coated
mushrooms in a 13x9 baking dish. You can roast in your oven at 265
degrees for about 1 hour, covered.
