EATS Eggs

onThis was the signature eggs dish at EATS - a restaurant in Frisco, CO my dad used to own.
Having the right tools in any kitchen will make cooking easier and more enjoyable! Not all of us average cooks out there have a kitchen ready for television, but we do hope you have a blender for this dish! If not, you can get by with a really strong arm and a whisk, however, having a blender really helps the cream cheese to distribute evenly within the eggs. This is another recipe that can be made using any of our blends!

INGREDIENTS:
1/2 tsp French Made Easy orAny of Our Blends
2 eggs
1 Tbsp cream cheese
1 pinch fresh ground black pepper
1 Tbsp butter
DIRECTIONS:
Pull out your blender, or a large bowl so you can safely whisk the eggs, and add everything but the butter. Pulse in blender until fluffy. If you don't have a blender, just whisk the mixture with a fork or a whisk as fast as you can until the cream cheese breaks into smaller pieces and the eggs are nice and fluffy.
In a medium-hot saute pan put in the tablespoon of butter and let it melt. Add the egg mixture and scramble until soft, turn off the heat, stir one more time and serve! DONE! Using 2 eggs per person, you can make as much as you like if you have a big enough pan. Just double this recipe for every person.
* You can try this recipe with any of the blends. Curry in a Hurry is amazing, but use about 1/8 of a teaspoon (just a couple small pinches). Mexican in a Minute and Smokin' Chipotle will surely impress you too! (Even better when the eggs are used in a breakfast burrito with bacon/ham, chilis and salsa!)
