Smokin' Chipotle Cornbread

onWe love cornbread - it was a staple in our house as kids. We hope that you all love this version of the American classic as much as we did.

INGREDIENTS:
2 Tsp Smokin' Chipotle Seasoning Blend
2 Eggs,
lightly beaten
1 Cup cornmeal
¾ Cup Gluten-free flour (or regular flour)
1½ Tsp Baking powder
1 Cup Buttermilk
½ Tsp Baking soda
1 Tbsp Sugar (or coconut sugar)
6 Tbsp Butter,
melted
DIRECTIONS:
This recipe is as easy as it gets. 9 ingredients, 15 minutes of prep and 20 minutes of cooking. In less than 45 minutes you can enjoy a smoky twist to an classic American side dish. Make sure to preheat your oven to 425 degrees!
Measure out all your ingredient and grab 2 mixing bowls.
Mix all dry ingredients together in one bowl. Next you need to add the buttermilk, eggs, and melted butter and whisk together.
Pour the buttermilk mixture into the bowl with your dry ingredients, then take a spatula and gently fold the mixture together. Make sure to mix it well enough so there are not dry clumps and the batter is smooth.
Line the bottom of an 8" baking pan with parchment paper and butter the inside walls. Pour the batter into the pan and tap it gently to remove any air bubbles. Place in your preheated oven and cook for 20-25 minutes, or until the top is golden brown.
The best way to test the cornbread to see that is it done is by inserting a toothpick into the middle of the pan, then remove it. If there is any batter sticking to the toothpick, let it cook a bit longer!
Let the cornbread cool for about 10 minutes. Remove from the pan and serve warm with a little butter and honey! Let us know how much you love the smoky spice of chipotle with honey. We are sure that you'll love this recipe.
