Chicken Salad with Walnuts & Grapes
Posted by
onThere is this amazing store called the Country Butcher that my wife and I discovered when traveling through Kennett Square, PA. We ordered their chicken salad, and it was FANTASTIC! It was so tasty that I wanted to create my version using French Made Easy seasoning blend. This recipe is also amazing with Curry in a Hurry, and it can also be made with Smokin' Chipotle, or Mediterranean Magic.
PREP TIME | COOK TIME | TOTAL TIME |
15 mins or so | 30 mins | 45 mins |
INGREDIENTS:
4½ Teaspoons
French Made Easy or Curry in a Hurry or Smokin' Chipotle
3 Chicken breasts, boiled and shredded
2 Green onions, diced
1½ Tablespoons Honey
¾ Cups Walnuts, chopped
¾ Cups Greek yogurt
½ Cups Hellmans mayo
1 Cup Seedless red grapes, cut in quarters
DIRECTIONS:
Here is everything you need to make this salad.
Use a pot large enough to hold the chicken and water so that you can cover them completely. Add 3 teaspoons of French Made Easy to the water. The seasoning will add lots of flavor to the chicken when it cooks.
If you are using bone-in chicken breast, then cook for about 30 minutes. If you are using boneless chicken, then cook for 15-20 minutes. Afterwards, drain the water with a strainer and let the chicken cool down, then pull apart.
Dice your green onions. Cut your grapes into quarters. You can also cut the grapes in half for quicker prep time, but I like smaller pieces when eating this salad.
Add all ingredients to a large bowl. Add the remaining 1.5 teaspoons of French Made Easy.
Add the mayo, yogurt and honey to the bowl, then mix well.
You can eat immediately or chill it in the refrigerator for a couple
hours to let the flavors release and intensify. Serve on lettuce or eat
as a sandwich. Either way, enjoy!
